--------------------------MARINADE-------------------------------
1 tb Low sodium soy sauce 3/4 ts Gingerroot, finely chopped
1 tb Water 5 Green onions, tops finely
2 tb Rice vinegar Chopped
3/4 ts Garlic, finely chopped 2 tb Apple juice concentrate
----------------------------BEEF---------------------------------
1 lb Lean flank steak, cut in 4 Green onions, thinly sliced
Strips 1/2 Green bell pepper,
2 tb Beef stock Diagonally cut
8 Dried mushrooms, soaked in 1 lb Angel hair, cooked to
Hot water and chopped Desired doneness
Marinate beef 1-2 hours or more in one third of the combined marinade
ingredients; drain beef, discarding marinade. Toss and cook beef
until done in a hot skillet or wok. Add remaining marinade, peppers
and onions; cook until crisp tender and serve over pasta. makes 4
servings.
Variations: Add 1 teaspoon hot Chinese mustard.
