------------------------INGREDIENTS-----------------------------
1/4 c Butter, plus 3 tbs 3 T Minced chives
1 t Dried red pepper flakes 2 T Dry white wine
3 c Pomodoro sauce 6 ea Plum tomatoes, crushed
1 lb Tagliarini, or fettuccine Salt and pepper to taste
Parmesan cheese, grated
Melt 1/4 cup of butter in medium saucepan and lightly saute' chives.
Add red pepper flakes and wine and blend thoroughly. Add Pomodoro
sauce and tomatoes. Simmer uncovered 45 minutes. Meanwhile, cook
tagliarini until al dente; drain. Toss with remaining tablespoons
butter. Keep warm. For sauce, adjust seasoning to taste. Continue
cooking 10 minutes, then pour over tagliarini. Serve with parmesan
cheese. Serves 4 to 6.
