1/2 c Butter or margarine -liquid (I use the cut-up
2 lb Top sirloin steak; coarse -tomatoes)
-ground 1/4 c Chili powder (I use New
2 lb Sirloin steak-top; cut into -Mexico chili powder), to
-1" pieces, (remove all fat -make it hotter, I make that
-white tissue -a generous 1/4 cup
3 Green peppers chopped 2 tb Salt (I use less)
3 Lg onions-chopped 1 1/2 ts Cumin
3 c Garlic-minced (i used more) 1 1/2 ts Black pepper (I never
1/2 c Parsley-snipped -measure)
3 c Tomatoes-16 oz including 1 oz Tabasco
In a large cooking pot brown meat in the butter/marg. Pour off 1/3 cup
liquid from meat and saute green pepper, onion, garlic parsley in
separate skillet until tender. Add to meat mixture and stir in chili
powder, salt, pepper and cumin. Add tabasco and tomatoes. Simmer
entire mixture 1 hour covered, remove lid and simmer at least 30 min
longer. Stir occasionally. Makes 10 servings.
