6 lg Tomatoes, sliced 1 Purple onion, sliced (OPT)
8 oz Mozzarella cheese 12 Whole fresh basil leaves
-----------------------***DRESSING***----------------------------
3 tb Olive oil Chopped
3 tb Red wine vinegar 1/4 ts Oregano
1 Garlic clove, minced Pepper
3 Fresh basil leaves, coarsely
On a bed of lettuce, arrange tomatoes, cheese, onion, if using, and
basil. Mix all dressing ingredients together and pour on top. Garnish
with sprigs of parsley, if de- sired.
