1/2 c Red Onion; minced
1 c Red Wine Vinegar
1/2 c Light brown Sugar
2 ts Fresh Mint; chopped
1 ts Cumin; ground
1 ts Coriander; ground
1 ts Black Mustard Seeds
1 ts Gingerroot, fresh; peeled;
-minced
2 ea Garlic Cloves; minced
1/2 ts Cayenne
1/2 ts Sea Salt
TOMATO MINT RELISH
[By: Tracy Pikhart Ritter] [Makes 1 1/2 cups]
Place all ingredients in a nonreactive saucepan. Bring to a boil,
reduce to a simmer, and cook for 30 minutes over low heat. Cool
before serving.
