1 ea Tomato 2 tb Fresh green chili strips
Peeled, seeded and cut into 1/2 ts Lemon juice
Strips 1/2 ts Fresh cilantro -- minced or
1/4 c Fresh peas -- or frozen Parsley
Parboiied Lettuce leaves
In a bowl, toss tomato strips, peas, chili strips, lemon juice and
cilantro or parsley. Cover and chill. Serve on a bed of lettuce.
Yield: 1 serving. Diabetic Ex changes: 1 vegetable, 1/2 starch: also,
