2 c Raisins 1 cn Condensed milk(14oz)
1 tb Grated lemon peel 1 tb Lemon juice
1 c Butter or margarine 1 1/3 c Brown sugar, packed
1 1/2 ts Vanilla 2 1/2 c Oats, uncooked
1 c Flour 1 1/2 c Walnuts, chopped
1/2 ts Baking soda 1/4 ts Salt(optional)
Heat oven to 375 degrees. Grease a 13 x 9 inch baking pan. In a medium
saucepan, combine raisins, milk, lemon peel and lemon juice. Cook over
medium heat, stirring constantly, just until mixture begins to bubble.
Remove from heat; cool slightly; set aside.
Beat butter or margarine, sugar and vanilla until fluffy. Add
remaining ingredients; blend until evenly mixed and crumbly. Reserve
2 cups. Press remaining mixture onto bottom of greased pan. Spread
raisin mixture to within 1/2 inch of pan. Sprinkle with remaining oat
mixture; pat lightly. Bake 25 to 30 minutes or until golden brown.
Cool completely. Cut into 1 x 2 inch bars. Makes about 4 dozen.
