2 lb Turkey;boned breast 1/2 c Parmesan Cheese
1/2 c Bread Crumbs 1 ts Oregano
1 ts Salt 1/2 c Olive Oil
1/8 ts Pepper 3 tb Margarine
2 Egg;beaten; Lemon Juice;
Pound turkey till thin. Pat dry and cut into 2' by 4' pieces.
Combine bread crumbs, Parmesan cheese, spices and salt. Set aside.
Beat eggs in a shallow dish. Dip turkey into egg, then into the
crumb mixture, coating both sides.
Heat oil and margarine in skillet. Saute turkey until brown -
about 1 - 2 minutes each side. Remove to a warm platter.
Sprinkle with lemon juice before serving.
