See below ingredients and direction
1Tbsp (or less) oil
1 lb chicken, cut in 1" pieces
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes w/jalapenos
3 cans (15 oz each) small white beans, undrained
3 tbsp mesquite marinade sauce
1/4 cup chopped parsley or cilantro
Sauté garlic and onion in oil until soft. Add chicken and cook until no longer pink.
Reduce heat to low. Add the rest of the ingredients and simmer for 10 minutes or so.
Makes 6 servings, 4 points each
