2 md Zucchini -- thinly sliced Drained
1 md Onion -- thinly sliced 1 cn Waterchestnuts -- 8 oz
1 c Chopped celery Drained sliced
1 cn Green beans -- drained 16 1 1/2 c Sugar
Oz 1 tb Water
1 cn Wax beans -- drained 16 oz 1 ts Salt
1 cn Mandarin oranges -- 15 oz
In a large bowl, toss zucchini, onion and celery. Cover with boiling
water; let stand for 1 hr. Drain. Add beans, oranges and water
chestnuts. combine remaining ingredients in a saucepan. Bring to a
boil; boil for 1 min. Pour over salad; cover and refrigerate 24 hr.
before serving. Yield: 16 to 20 serving. "Edditor Note; Home-canned
or fresh green and wax beans can be substituted for puchased canned
beans. Use 2 cups of each, and if using fresh beans, cook until
crisp-tender before adding to salad.
