1 c Minced sweet white onion
1 tb Fresh lime juice (or more,

1 tb Olive oil
2 Cloves garlic, minced
1 Minced chipotle from canned
Chipotles in adobo (or more,
To taste)
Salt and pepper
Char the tomatoes on a grill, under a broiler, or in a cast iron pan.
Put them in a bowl and add the remaining ingredients. Mix together.
Season with salt and pepper.
