1/4 c All purpose flour 1/4 c Safflower or
3/4 c Yellow cornmeal -vegetable oil
1/3 c Sugar 1 c Blueberries
2 t Baking powder 1 ea Preheat the oven to 375F.
1/4 t Baking soda -Line a 12 count muffin tin
1/2 t Grated orange zest -with paper baking cup
1/4 t Salt 2 ea In a large bowl, combine
1 ea Egg -the flour, cornmeal,
3/4 c Skim milk -sugar, baking powder,
1/4 c Orange juice
baking soda, orange zest adn salt. Whisk gently to mix. 3. In another
bowl, combine the egg, milk, orange juice and oil. Whisk until well
blended. Add all at once to the dry ingredients. Stir only till
moistened;the batter should be slightly lumpy. Gently fold in the
blueberries. 4. Spoon the batter evenly into the prepared pan. Bake
20-25 minutes or till the muffins are golden and springy to the
touch. Remove the muffins from the pan and cool on wire rack. From
