Cooking Preparation of the Recipe:

1 c Pearl barley 1/4 ts Salt
1 lg Yellow onion(s) 1/2 ts Pepper
Finely diced 2 tb Basil pesto
1 md Bay leaf (purchased or homemade)
3 1/2 c Chicken stock

Place the barley in a fine sieve and wash under cold running water
until the water runs clean, about 5 min. Drain.

In a heavy saucepan, combine the barley, onion, bay leaf, chicken
stock, salt and pepper. Bring to a boil, reduce the heat, cover, and
simmer for 30 min. Remove from the heat and let stand for 5 min
uncovered. Fold in 2 tb of basil pesto and mix well, fluffing with a
fork,
