500 g Small carrots cleaned and 1 Bay leaf
-left whole 1 bn Fresh thyme
1 tb Sugar Salt and freshly ground
1 tb Butter -pepper
--------------------------GARNISH-------------------------------
Sprigs of thyme
Place the carrots in a saucepan with enough cold water to cover. Add
the sugar, butter, bay leaf, half the thyme, salt and pepper to taste
and cook over medium heat for about 20 mins or until the carrots are
tender. Halfway through the cooking time, increase the heat and
reduce the liquid until it is golden brown and caramelised.
Serve the carrots garnished with the remaining sprigs of thyme.
