2 tb Oil 3/4 c Milk
3/4 lb Broccoli; coarsely chopped 1/8 ts Nutmeg
1 Onion; chopped 1 c Cheddar cheese; extra sharp
3 tb Flour Black pepper
2 c Chicken broth
Cook onion and broccoli in oil, covered, over low heat for 10 minutes,
until broccoli is tender. Mix in flour, then chicken broth, stirring
constantly; bring to a boil. Reduce heat and add milk and nutmeg;
simmer on low, covered for 4 minutes. Turn off heat. Puree soup in
blender or food processor; return to pot. Stir in cheese over very
low heat, until melted. Season to taste. 276 calories and 18 grams
