2 ea Chicken -- cut up skinned 1/2 ts Dried basil
Broiler/fryer about 3 pound 2 ts Salt
Each 1/4 ts Pepper
3 tb Cooking oil 8 ea Carrots -- cut 1 in. pieces
2 qt Chicken broth 2 1/2 c Frozen green beans -- cut
1 c Brown rice -- uncooked 1/4 In strips
1/2 c Barley, pearled 2 ea Celery ribs -- cut 1 in.
1 md Chopped onion Pieces
2 ea Bay leaves
In a 8 qt. kettle or dutch oven, brown chicken in oil. Remove chicken
and set aside. Drain. In the same kettle, combine the broth, rice,
barley, onion, bay leaves, basil, salt and pepper; bring to a boil.
reduce heat. Return chicken to pan; cover and simmer for 45 min or
until the chicken and grains are tender. Remove bay leaves before
serving. Yield: 12 servings.
