2 cups chicken broth
2/3 cup regular rice
1 10oz package frozen chopped broccoli
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 1/2 teaspoon salt
dash pepper
2 cups milk
2 cups cubed cooked chicken or turkey
4 1/2 oz. can sliced mushrooms, drained
In saucepan bring chicken broth and rice to boiling. Reduce heat; cook, covered, for 15 minutes. Remove from heat; let stand, covered, for 10 minutes. Meanwhile, cook broccoli according to package directions; drain well. In saucepan melt butter. Stir in flour,salt, and pepper. Add milk all at once; cook and stir till thickened and bubbly. Stir in chicken, cooked rice, drained broccoli, and mushrooms. Turn into a 2 quart casserole. Bake, covered, at 350 degrees till heated through, 30 to 35 minutes. Sprinkle with almonds.
