3 Chicken Breast;skinned, bone 1 c Chicken Stock
1/2 c Celery;diced 2 tb Cornstarch
1 c Green Beans;blanched 6 tb Water;cold
1/2 c Scallion;chopped 2 tb Soy Sauce
1 cn Water Chestnut;drained, chop 1 tb Ginger;fresh, grated
1 c Mushrooms;chopped tb Oil;peanut
Cut chicken into bite-sized pieces.
Heat oil to very hot in wok or large skillet; add chicken, cook 1
minute. Add the rest of the vegetables and the ginger, cook 2 more
minutes. Add the chicken stock.
Mix the cornstarch with the water, add to the chicken, stirring
constantly.
Add the soy sauce, cook 1 more minute.
Serve over rice.
