3/4 lb Boneless skinless chicken -BATTER:
-breasts 1 c Flour
2 ts Lemon juice 1 c Water
1 ts Curry powder 1/2 ts Salt
1/8 ts Chili powder or cayenne 1 ts Baking powder
1/4 ts Salt 1/2 ts Curry powder
Oil for deep frying 1/2 c Dry bread crumbs
Lemon wedges for garnish
Rub chicken breasts with a mixture of the lemon jice, curry powder,
chili powder and salt. Place on a plate, cover and let stand at room
temperature for 10 minutes. Cut meat into 12 stripsnadn thread on
metal or bamboo skewers. Mix all batter ingredients except bread
crumbs. Spread bread crumbs out on a plate. Heat oil to moderately
hot. Dip chicken in batter then roll in bread crumbs until well
coated. Deep fry about 2 1/2 minutes until cooked through and golden
brown. Serve hot with lemon wedges.
