1 tb Paprika 1/4 ts Mace
1 ts Ground black pepper 1/4 ts Coriander
1/2 ts Ground cumin 1/4 ts Ground cardomom
1/2 ts Tumeric 1/2 Dry bay leaf, crumbled
1/2 ts Marjoram 1 ts Salt
1/2 ts Allspice 1 ts Honey
1/4 ts Nutmeg 1/2 oz Unsweetened Baker's
1/2 ts Cinnamon -Chocolate, grated
----------------------MAIN INGREDIENTS---------------------------
1 lb Chuck, ground fine (twice 1 md Onions, chopped fine
-through a grinder 2 cl Garlic, minced
-------------------SECONDARY INGREDIENTS------------------------
1 c Tomato sauce 1 c Water
2 tb Ketchup (or Catsup) 1 tb Red wine vinegar
Salt a large cast iron skillet. Turn heat to medium and add Main
Ingredients. Cook until meat is browned.
Add Secondary Ingredients to browned meat mixture. When mixture
begins to boil, add Spice Ingredients. Cover and simmer on low heat
for 1 hour.
Serve over cooked spaghetti. Add red kidnty beans, chopped onion,
cheddar cheese to make 5-way or choose any of those ingredients to
make 4-, 3-, or 2-way chili
