1/4 c Lemon juice
2 tb Lemon rind; chopped
5 Fresh figs; diced (or dried
- soaked overnight)
2 Papayas; diced -OR-
4 c Mexican papaya or honeydew
1/4 c Onion; finely diced
1 c Green pepper or green
-cabbage; diced
2 md Bananas; thinly sliced
Pour lemon juice over figs and papayas and let sit 1 hour. Mix in
remaining ingredients and pack tightly into a casserole dish. Bake
in a 350 degree F oven for 20 minutes or microwave for 5 minutes.
Chill before serving.
