1 tb Olive oil 8 oz Tomato sauce
1 ea Clove of garlic, chopped 6 oz Tomato paste
1 1/2 lb Sweet or hot italian sausage 1 ea Med-lge. onion, chopped
4 oz Mushrooms,sliced 1/2 ea Green pepper, chopped
2 oz Parmesan cheese, shredded 1/2 c Fresh parsley,chopped
2 oz Mozzarella cheese, 1 ts Sugar
Shredded 1/2 ts Dried oregano
28 oz Whole tomatoes pureed in 1/2 ts Dried basil
-blender 1/4 ts Fennel seed
In large sauce pan or dutch oven, lightly brown garlic in oil. Add
sausage and brown. Drain fat, remove sausage from pan and setaside.
Add paste to drippings, cook about 5 minutes stirring constantly.
Add pureed tomatoes and sauce. Cook over medium heat 15 minutes,
stirring occasionally. Return sausage to pan. Add remaining
ingredients except cheeses. Simmer 15 minutes. Add cheeses
gradually, stir until dissolved in sauce. Cover and simmer 1 1/2 hrs.
