Cooking Preparation of the Recipe:
2 Chicken breasts 2 tb Parsley
1 c Chicken broth 1 sm Clove chopped garlic
1/2 Sliced sweet onion Cucumber Glaze *
Lightly salt chicken breasts.Put in casserole;cover with onion slices,
parsley and garlic. Pour chicken broth over all. Simmer for 30 to 35
minutes. Remove from broth. Cool.
Cucumber Glaze:
2 Tbs light salad dressing 4 Tbs chopped,peeled cucumber 2 tsp grated
lemon peel 2 tsp lemon juice Salt to taste
Mix well and spread on chilled chicken.
