Cooking Preparation of the Recipe:

12 lg Eggs -cut into 1/2" cubes
1/2 ts Salt 6 oz Nova Scotia smoked salmon
1/2 ts Pepper -or lox, thinly sliced
3 tb Butter -cut into 1/2" wide strips
8 oz Pkg cream cheese Chopped chives (opt)
-well chilled

Whisk eggs, salt and pepper in large bowl to blend. Melt butter in
large non-stick skillet over medium-high heat. Add eggs. Using wooden
spoon, stir until eggs are almost set, about 5 minutes. Gently fold
in cheese and salmon and stir until eggs are set, about 1 minute.
Transfer eggs to platter. Sprinkle with chives, if desired, and serve.
