Cooking Preparation of the Recipe:

2 c Kellogg's special K
1 1/2 c All-purpose flour
3/4 c Granulated sugar
3 ts Baking powder
3/4 ts Salt
2 ts Grated lemon rind
1/2 c Chopped walnuts
3/4 c Milk
1 Egg
1/3 c Melted shortening
Glaze
1/4 c Granulated sugar
2 tb Lemon juice

Preheat oven to 375 degrees.Crush special K to 1 cup. Sift
flour,sugar,baking powder and salt together.Add lemon rind and
walnuts. Stir in milk, egg and melted shortening.Pour into a well
greased loaf pan and bake 30 to 35 minutes.While still warm mix glaze
and spoon over surface.
