1/2 c Sliced celery 1/2 c Sliced radishes
1/2 c Sliced cucumber 1/2 c Italian salad dressing
1/2 c Sliced carrots 5 c Torn salad greens
In a large bowl, combine the celery, cucumber, carrots and radishes.
Add the dressing and refrigerate for 1 hour. Just before serving, add
greens and toss. Yield: 5 servings. Diabetic Exchanges: One serving
(prepared with light salad dressing) equals 1 vegetable, 1/2 fat;
also, 44 calories, 216 mg sodium, 2 mg cholesterol, 5 gm
carbohydrate, 1 gm protein, 3 gm fat
