2 1/4 c Buttermilk baking mix 1/2 ts Vanilla extract
1 c ;water 1/4 c All-fruit marmalade spread
2 tb Granulated sugar -(12.5 calories per tsp.)
1/4 c Egg substitute
Preheat oven to 400 degrees F. Spray twelve 2-3/4-inch muffin cups
with nonstick cooking spray.
In large bowl, combine baking mix and sugar. Add 1 cup water, the egg
substitute, and vanilla; mix until just blended. Spoon 1/4 cup
batter into each muffin cup; top each with 1 teaspoon orange
marmalade. Spoon remaining batter evenly over marmalade.
Bake muffins 12-15 minutes or until toothpick inserted in center
comes out clean. Remove; place on rack to cool.
Each serving provides: 1 B, 50 optional calories. Per serving: 112
cal, 2 g pro, 3 g fat, 20 g car, 271 mg sod, 0 mg chol.
