-menudo! -Cut into bite-size pieces.
5 lb Tripe (menudo) -Split the
2 ea Calves feet Calves feet and cut into
3 T Garlic powder -small pieces. Put the
1 ea Onion, chopped fine -menudo, calves
3 cn White hominy
feet and salt into a large pot. Cook over high flame until all juice
is extracted. Lower flame to medium, and continue to cook until
menudo is tender, but still firm. Add onion, garlic, and hominy.
Serve with separate bowls of chopped onion and crushed chiles for
seasoning.
