------------------------INGREDIENTS-----------------------------
2 lb Firm fresh mushrooms 3/4 c Sour cream or plain yogurt
1 ea Onion, diced -salt pepper (to taste)
1 T Vinegar 1 T Parsley, finely diced
-------------------------DIRECTIONS------------------------------
1 c Bell peppers, diced 1 T Lemon juice
2 ea Cloves of garlic, minced 1 t Paprika
Clean and trim the mushrooms, blanch for 1-2 minutes in boiling salted
water. Drain mushrooms and set aside. Mix the onion, garlic, green
pepper, lemon juice and vinegar. Season to taste with salt pepper.
Blend in the sour cream and stir until smooth. Add in the mushrooms.
Note: if the mushrooms are large half or quarter them. Stir until the
mushrooms are well coated with the dressing. Sprinkle with parsley
and paprika when serving.
