Cooking Preparation of the Recipe:

3/4 c Whole-wheat flour 1/2 c Milk
3/4 c Rolled oats 1/2 c Orange juice
1/2 c Unbleached flour -- freshly squeezed
1 tb Baking powder 1 lg Egg; lightly beaten
1/2 c Brown sugar; packed 1 c Banana; mashed
1/2 ts Salt 2 tb Orange zest; grated
3 tb Wheat germ 1/4 c Unsalted butter; melted
1 ts Ground cinnamon

Preheat oven to 400 F. Grease six 3-inch muffin cups.

In a large bowl, combine the dry (first 8) ingredients. In a small
bowl, combine the liquid ingredients, mixing well. Add the liquids to
the dry ingredients all at once and stir until just moistened. Spoon
the mixture into the muffin cups, filling each 2/3 full.

Bake for approx. 25 mins, or until golden and a toothpick inserted in
center of muffin comes out clean.
