1/8 c STAR Olive Oil 1 c Chicken broth
1 sm Zucchini, sliced (~1 cup) 1 cn PRECIOUS Ricotta Cheese
1 c Cut-up plum tomatoes 8 oz PRECIOUS Mozzarella Cheese,
2 tb Fresh basil -shredded
-OR 1/2 c Sliced ripe olives (opt)
1 t Dried basil 1 lb Hot cooked fettuccine
2 Garlic cloves, minced
In a large saucepan over medium heat, heat oil; add zucchini,
tomatoes, basil and garlic and cook until tender-crisp, stirring
often. Add broth; stir in ricotta and mozzarella cheese and heat
until cheese is melted. Add olives. Toss with fettuccine.
