3 lb Pork Roast;rolled boneless 1/2 ts Pepper
1 c White Wine 1 c Cream
3 tb Mustard;Dijon 3 tb Capers;chopped
Rub pepper into roast. Place fat side up on a rack in a roasting
pan. Cook in 375 F oven for 45 - 55 minutes, until done.
Remove roast; keep warm on a serving platter.
Skim fat from the roasting pan. Deglaze with white wine over high
heat, about 3 minutes. Add mustard, cream, capers and any juice from
pork roast. Cook until reduced by almost half.
Serve over the sliced pork roast.
