2 c Tomato sauce 1/2 ts Onion powder
3 c ;water 3 tb Chili powder
1/4 ts Garlic powder 4 tb Cornstarch or arrowroot
-------------------------CASSEROLE------------------------------
5 c Pinto beans; mashed 1/2 c Black olives; chopped
1 c Green onions; cooked 12 Whole wheat tortillas
Sauce: Combine all sauce ingredients in a saucepan.
Cook, stirring constantly, until mixture boils and thickens, about 7
minutes.
Casserole: Place casserole ingredients in separate bowls.
To assemble: Spread 1 cup sasuce in the bottom of a coverfed
casserole dish. Fill each tortilla with a mixture of the beans, green
onions and olives. Roll up and place seam side down in the casserole
dish. Pour remaining sauce over the rolled-up tortillas. Cover and
bake at 350 degrees for 30 minutes.
Variation: Substitute 2 cups of rice for 2 cups of beans.
