3/4 c Coconut milk 1 lb Large shrimp
1/2 ts Flour -peeled and deveined
1 1/2 tb Canola oil or butter 1/2 ts Garam masala
1 tb Garlic; minced Salt
1 ts Jalape¤o pepper Chopped basil leaves OR
-cored, seeded and minced -cilantro to garnish
1/4 ts Turmeric
Put the coconut milk and flour in a small bowl and mix thoroughly.
Add the onion and garlic and cook until the garlic is golden. Add the
jalapeno and turmeric and stir to distribute evenly. Add the coconut
milk mixture and bring to a boil. Add the shrimp, reduce the heat,
cover and simmer until the shrimp are opaque through (cut to test), 5
to 10 minutes. Gently stir in the garam masala and salt to taste.
Spoon shrimp onto individual plates, garnish with basil and serve.
