Cooking Preparation of the Recipe:

-Couscous -chopped
2 Scallions, sliced 2 Tomatoes, seeded and
1 15 oz can of chickpeas, -chopped
-rinsed and drained -Chopped black olives
1 Cucumber, seeded and -(optional)

Combine cooked, cooled couscous with other ingredients. Dress with
your favorite vinaigrette. This is a delicious summer side dish or
