1/2 c Onions, yellow; chopped 2 tb Parsley,fresh;finely chopped
1/2 c Bell peppers, green; chopped 2 ts Basil, fresh; finely chopped
1/4 c Vegetable broth 1/2 ts Salt
16 oz Tomatoes, canned, whole 1/4 ts Black pepper
Saute the onions and peppers in the broth in a large saucepan for 5
minutes over medium heat. Add the remaining ingredients and cook over
medium-low heat for 25 minutes. Serve hot over pasta, vegetables, or
crepes.
