1 lg Clove of garlic
28 oz Canned tomatoes
4 tb Tomato paste
1/2 ts Sugar
1/2 ts Salt
1 ts Dried oregano
4 lg Fresh basil leaves, chopped
1/4 ts Hot red pepper flakes
1/4 ts Freshly ground black pepper
1. In a food processor, mince garlic. 2. Place a strainer over a
bowl and drain tomatoes by gently pressing
and crushing them with a wooden spoon to remove most, but not all,
liquid. 3. Transfer crushed tomatoes to the food processor and
discard or save
liquid in bowl for another use. Add tomato paste (adjusting it to
the amount of liquid remaining in the drained tomatoes..sauce must
not be too thick or too runny), sugar, and salt and process
ingredients a few seconds to combine. Transfer to a non-aluminum
bowl. Stir in oregano, basil, hot pepper flakes, and pepper.
Cover and refrigerate until using. Makes about 1 1/2 cups ~--
