8 thin slices Italian prosciutto
1 ripe melon, any kind except watermelon
freshly ground pepper
Detach melon from the rind and cut into wedges. Arrange the prosciutto over the top of the melon. Or, if you prefer, roll the prosciutto into paper-thin rolls and serve 2 with each slice of melon. Serve with freshly ground pepper.
NOTE: If Italian prosciutto not available, substitute Virginia or country ham, sliced in same way. If melon is out of season, substitute pears, figs or even avocado.
