1 lb Green beans; stemmed Salt and pepper
3 Garlic cloves; smashed 3 Anchovy fillets; mashed
3 Sprigs of thyme 2 ts To 3 ts lemon juice
-coarsely chopped Zest of 1 lemon,
1/4 c Extra-virgin olive oil -finely grated
1. Preheat oven to 450øF. In a large baking dish, toss the green
beans with the garlic, thyme and olive oil and season with salt and
pepper. Spread the beans and seasonings in a single layer and roast
for about 15 minutes, tossing occasionally, until tender and lightly
browned. Discard the thyme.
2. Transfer the beans to a bowl. Add the anchovies, lemon juice and
lemon zest and toss well to coat. Serve warm or at room temperature.
