2 tb Olive oil 1/4 ts Pepper
20 Milliliters garlic, sliced 10 oz Fresh spinach -- chop
-thin -coarse
1 Onion -- sliced 1 1/2 c Mozzarella; shred -- divide
1/2 ts Salt 1 12" pizza crust
Preheat oven to 450~. Heat oil, add garlic and cook, stirring
frequently, until golden, 4 to 5 minutes. Discard garlic. Add onion,
salt and pepper; cook until golden and tender. Stir in spinach; cook,
stirring, until spinach is wilted and liquid is evaporated. Sprinkle
3/4 c mozzarella over crust; top with veggie mixture. Sprinkle with
3/4 c cheese. Bake 10 minutes. Per Slice: 260 Cal, 11 gr Fat.
VARIATION-Broccoli Rabe and Red Pepper Pizza-Prepare and bake pizza
as directed but substitute 1 bunch broccoli rabe, tough stems removed
and coarsely chopped, for spinach. Cook, stirring frequently, until
tender-crisp. Sprinkle half the cheese over crust; top with broccoli
mixture and half of 1 7oz jar roasted red peppers, sliced thin;
sprinkle with cheese. Per Slice: Same Cal and Fat
