8 oz fresh angel hair pasta --
: cooked
2 TB vegetable oil
1 onion -- sliced thin
2 chinese eggplant -- sliced
: thin
1/2 head Napa cabbage --
: shredded
2 md tomatoes -- diced
1 TB Herbes de Provence
In a non-stick frying pan or a wok, heat oil until smoking. Add the
onions and cook until softened, about 4 minutes. Add eggplant and
cook for 4 more minutes. Add the cabbage, tomatoes and Herbes de
Provence and simmer for 5 minutes. Toss with angel hair pasta and
season to taste.
Yield: 2 generous servings
