1 c Fat-free cottage cheese 1/8 ts Dill weed
1/2 c Low-fat Swiss cheese -- 1/8 ts Pepper
Shredded 1/4 c Carrots -- shredded
1/4 c Parmesan cheese -- grated 1/4 c Unsalted sunflower seeds --
2 tb Skim milk Optional
In a blender or food processor, combine cheeses, milk, dill and
pepper. Process until smooth. Stir in carrots. Cover and chill. Just
before serving, stir in the sunflower seeds if desired. Yield: 1-3/4
cups. Diabetic Exchanges: One 2-tablespoon serving (prepared without
sunflower seeds) equals 1/2 meat; also, 41calories, 116 mg sodium, 6
mg cholesterol, 7 gm carbohydrate, 5 gm protein, 2 gm fat
