Cooking Preparation of the Recipe:

1 3/4 c All-purpose flour 1/8 ts Ground allspice
1/3 c Sugar 1/8 ts Ground ginger
2 ts Baking powder 1 ea Egg -- lightly beaten
1/2 ts Ground cinnamon 3/4 c Milk
1/4 ts Salt 1/4 c Vegetable oil
1/4 ts Ground nutmeg 1/2 c Apple butter -- thick

--------------------------TOPPING-------------------------------
1/2 c Pecans -- chopped 3 tb Sugar

In a medium bowl combine the first eight ingredients. Combine egg,
milk and oil; stir into dry ingredients just until moistened. Fill
greased or paper-lined muffin cups with a rounded tablespoon of
batter. Top each with a rounded teaspoon of apple butter and
remaining batter. Combine topping ingredients; sprinkle over muffins.
Bake at 400 deg. for 15 to 18 minutes. Cool in pan 10 min. before
removing. Yield: about 12 standard-size muffins. Editor's Note: This
recipe was tested with commercially prepared apple butter.
