1 ea 5lb turkey breast skinned Vegetable cooking spray
And boned 1/3 c Reduced calorie apricot
4 ea Clove garlic Spread
2 tb Peeled and slice gingerroot 1 tb Brown mustard
1/2 c Dry white wine 2 ts Reduced sodium soy sauce
Cut 10 slits into turkey breast. Stuff slits with garlic and
gingerroot slices. Place turkey breast in a shallow dish and pour
over wine over top. Cover and marinate in refridgerator about 8
hours. Transfer turkey breast to rack of roasting pan coated with
cooking spray. Combine apricot spread, mustard, and soy sauce
stirring well. Brush one fourth of mixture over breast. Cover with
aluminum foil and bake at 325 for 1 1/2 hours. Baste with apricot
mixture. Bake uncovered an additional 30 minutes or until meat
thermometer registers 185. Baste with apricot mixture every 10
minutes. Transfer turkey to a serving platter let cool slightly
