Beef salad with fresh basil dressing

Cooking Preparation of the Recipe:

6 c Torn mixed greens 1/2 md Zucchini; sliced
1/2 lb Lean cooked beef (1 1/2 c.) 1/2 c Broccoli flowerets
-- cut in thin strips 8 oz Can julienned beets
1 sm Parsnip; thinly sliced -- well drained
1 md Carrot; thinly sliced

--------------------FRESH BASIL DRESSING-------------------------
1/2 c Buttermilk 1 tb Lemon juice
3 tb Mayonnaise 1 ts Sugar
1 tb Snipped fresh basil 1 ds Pepper

In a large salad bowl, combine the greens, beef, parsnip, carrot,
zucchini and broccoli. Toss to mix. Pour dressing over salad; toss
lightly to coat. Top with beets.

To make the dressing, stir dressing ingredients together. Yield:
About 3/4 cup of dressing.
