1 c Shortening
1 c Brown sugar
1 c Sugar, granulated
4 Eggs, beaten well
1 ts Vanilla extract
1 1/2 c White flour, sifted
1 ts Salt
1 ts Baking soda
2 c Oats, quick-cooking
1/2 c Walnuts, chopped
-(optional)
Preheat oven to 350 degrees F. Cream shortening and sugars. Add eggs
and vanilla. Beat well. Sift flour, salt and soda and add to
creamed sugars. Add oatmeal and nuts and mix well. Spread evenly into
a greased 13x9x2-inch baking pan. Bake at 350 degrees F. for 20
minutes. While still warm, cut into squares and remove from pan.
NOTES:
* Chewy rolled oatmeal bar cookies -- If I had ever dreamed that my
oldest son would grow up to be the moderator of mod.recipes, I might
have taught him how to make these cookies when he was young. They
were his favorite cookies. Yield: Serves 6 children.
