2 c Water
1 md Green pepper; chopped
1 sm Onion; chopped
1/2 Cl Garlic; chopped
1 tb Olive oil
1/2 ts Salt
1 c Rice
2 c Water
1/2 c Cheese; grated

Cover beans with the boiling water and cook 1 hour. In a saucepan,
brown green pepper, onion, and garlic in the oil over low heat for
about 15 minutes. Combine with beans; add the salt and cook until
beans are tender and the liquid is thick, about 1 hour. Meanwhile,
cook rice in the water as directed on package, about 40 to 45 minutes
or until tender. Serve the beans over the rice and sprinkle cheese
on top.
