Prepare Sweet Potato-Pecan Muffins (page 198), substituting a mixture
of 2 T instant espresso coffee granules dissolved in 2 T boiling
water, 1 T coffee-flavored liqueur (optional), and 1/4 C milk for the
2/3 C milk. Omit sweet potato and pecans and fold 3/4 C semisweet
chocolate chips into batter.
