Makes 3 to 4 quarts
30 ea Tomatoes, medium-ripe
12 ea Tart apples, cored
5 ea Green peppers
10 ea Onions
1 qt Cider vinegar
3 c Sugar
5 tb Salt
1 ts Cinnamon
1/2 ts Cayenne pepper
Chop tomatoes, apples, peppers and onions. Mix together and add
vinegar and sugar. Put into a large pot and simmer until soft. Press
through a coarse sieve or colander. Blend in salt, cinnamon and
cayenne and return to low heat. Simmer until ingredients thicken,
about 1 hour. Makes 3 to 4 quarts. Source: The Farmers' Almanac Cook
