3 tb Butter 1 ts Salt
3 lb Chicken, cut in serving 2 ts Paprika
-pieces 1/8 ts Pepper
1 Onion, diced 1 c Unsweetened apple juice
1/2 c Diced carrot 1 3/4 c Chopped skinned tomatoes
2 Leeks, white part only, 1/2 c Finely sliced mushrooms
-sliced 2 tb Chopped chives
Heat 2 tablespoons butter in large heavy skillet. Add chicken and
brown well on all sides. Remove from pan. Add onion and carrot to
same pan and saute until brown. Add remaining butter and leeks; saute
briefly, then lay chicken pieces on top of vegetables. Sprinkle with
salt, pepper, and paprika. Pour apple juice over chicken. Cover and
cook 35 minnutes over low heat. Add tomatoes and muslhrooms to stew
the final 10 minutes of cooking time. Sprinkle with chopped chives
and serve with brown or white rice.
